Onion Tart

This tart was a BIG hit one Sunday when it was my turn to take treats for Fellowship.  It also goes well as something different with soups.

Ingredients for Crust:
  • 1/2 cup margarine, softened
  • 3 oz low fat cream cheese, softened
  • 1 cup flour
Ingredients for Custard Filling:
  • 1 medium onion, sliced thin
  • 1 teaspoon olive oil
  • 1/4 cup blue cheese dressing
  • 1/4 cup milk
  • 2 large eggs
  • salt and pepper to taste
  • 1/4 cup shredded Parmesan cheese
To prepare Crust:  Combine butter and cream cheese.  Add flour and mix to form a soft dough.  Pat out into an ungreased 12" pizza pan, leaving a ridge on the edge to hold in the filling.  Wax paper over the top of the dough works REALLY well for this step.  Chill until ready to fill.

To prepare Custard Filling:  Saute the sliced onions in the olive oil until translucent.  Arrange over crust.  In a mixing bowl, whisk together the blue cheese dressing, milk, eggs, salt and pepper until smooth.  Pour mixture over onions.  Sprinkle Parmesan cheese over the top.   Bake at 350 F for 25 minutes or until lightly browned.  Use pizza cutter to cut into squares.
