Apple Cobbler

This cobbler recipe is so good!  The batter will bake up over the fruit on top and cover it.

I use whatever fruit is in season, peaches, cherries, apples, whatever.  Serve it hot with some fresh cream or ice cream.

Ingredients:
  • 1/2 cup butter or margarine (1 stick)
  • 1 1/4 cup flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 cup milk
  • 4 cups sliced apples
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Directions:  Preheat oven to 350 degrees Farenheit. Put butter in a 9x13inch glass baking dish in the preheating oven.

Mix together apples and last 3 ingredients.  Allow to sit while making batter.

Combine flour, baking powder, salt, sugar and milk, mixing well using electric mixer.  Beat on medium speed for 2 minutes.  When butter is completely melted, remove baking dish from oven and pour the batter into the melted butter.  Carefully spoon the fruit mixture evenly over the batter.  Return to oven and bake for 45 minutes.
