My friend Joanne made these cookies for our church bazaar.  I wish I had got there sooner - I would have bought them ALL.  So I had to settle for the recipe and I'll share.  It's also on page 124 of A Taste of Heaven a Collection of Recipes by Valier United Methodist Church Women.  If you're interested in the collection email me and I'll get you fixed up with one.  They are $10.00 US + shipping/handling.

Joanne's Filled Cookies

Dough

Filling

  • 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1/4 teaspoon soda
  • 1/2 teaspoon salt
  • 2 cups dates, figs or raisins, ground
  • 3/4 cup sugar
  • 3/4 cup water
  • 1/2 cup chopped nuts

Cook dates , sugar, water, and nuts together, stirring constantly until thick.  Cool.

Preheat oven to 400 degrees F.  Mix margarine, sugar, and eggs; stir in vanilla.  Blend in flour, soda, and salt.  Chill.  Roll dough 1/8 inch thick.  Cut 3-inch rounds.  Place half of them on cookie sheet.  Place rounded teaspoon of filling on each round.  Top with another round and seal.  Sprinkle lightly with sugar.  Bake 8-10 minutes.
