Shredded Pork Roast

A couple of years ago, I was looking for a recipe for pork roast to shred for burritos and green chili and there were none that struck my fancy, so I made this one up.  It has become my family's favorite burrito filling!  Once it's shredded, you can use it in anything - tamales, burritos, sandwiches, chili, alone......

Put roast in crock pot.  Sprinkle rest of ingredients over roast.  Cover and cook on low for 8-12 hours, until table fork tender.   Remove from crock pot and let rest (cool) for 15 minutes.  Defat drippings in crock pot and save.  Pull apart roast with fingers (I use rubber gloves for protection) into shredded pieces or use fork, defatting roast as you work.  Add back defatted drippings and mix well.  Season with extra salt and pepper to taste.  Enjoy!
