Yum, cream poached eggs!
Place bacon in a single layer in a lightly greased 9-x9-inch baking dish; sprinkle with Monterey Jack cheese. Break eggs over cheese, spacing evenly. Pour half and half over eggs and sprinkle with salt and pepper.
Bake at 425 degrees for 10 minutes. Sprinkle Parmesan cheese and paprika on top. Bake 8-10 more minutes or until set. Remove from oven; sprinkle with parsley. Let stand 10 minutes before serving.
Serve with hot biscuits or croissants and fresh fruit.
