Sour Cream Cookies

These cookies are a delicate vanilla flavored cookie.  Excellent as a substitute for your morning biscotti or by the handful in the afternoon.  They are also good as a rolled cookie and with your favorite icing.  You can freeze the dough and use like the store bought frozen cookie dough if you don't want (or have time) to bake the whole batch.  It makes 6-7 dozen cookies.

Ingredients:

Directions:  Cream butter and sugar.  Add eggs, one at a time, and vanilla. Sift flour and soda together. Add to sugar mixture - alternating with sour cream.  Mix well.  Split into 6 equal parts and roll each part into a 1 1/2 inch diameter log. Wrap parts in plastic wrap or parchment paper and chill well (2 hours refrigerator or 30 minutes in freezer).

Slice log into 1/2 inch slices and place on parchment paper lined baking sheet.  Bake for 6-8 minutes at 375 degrees or until bottom is delicately browned.  Cool on rack.  Enjoy!
