This is really easy good food that will impress anyone! Grill your chicken breasts outside on the grill or saute it in a little olive oil before dicing. The hazelnuts are worth the extra effort. (di Nocce means *with nuts*) To skin the hazelnuts (also known as filberts), spread them on a baking sheet and bake at 325 degrees F for 10 minutes. Cool for a few minutes and rub them in your palms to remove most of the skins. The sauce can be made while your water is boiling for the pasta. Remember that angel hair pasta only takes a couple of minutes to cook.

In a food processor, blend the hazelnuts until they are chopped fine but
not a paste. Add the Parmesan, cream, mustard, salt. pepper,
and nutmeg. Blend briefly. Pour into a skillet preheated on medium
high. Add diced chicken. Heat to simmer, cover, and turn off
heat. This will finish sauce while pasta is cooking.
Toss with pasta and garnish with parsley sprigs. Serve with a fresh melon compote and garlic bread. Serves 4-6.
