I have been making biscotti for a couple of years now. Trying different recipes. Looking for that just right something. Finally figured it out all on my own! Tastes like the ones you pay an arm and a leg for at the store. Mine is sorta healthy too! You will have to grind your own spice mix though - it is worth the effort.
Ingredients:
Preheat oven to 350 degrees and line cookie sheet with parchment paper.
Beat together oil, sugar and eggs on medium-low speed in your stand mixer. Let it mix while you get the next stuff together.
Nip the ends off the vanilla bean and cut into 1" pieces. In your coffee-grinder-turned-spice-grinder, grind vanilla bean pieces and star anise until a fine powder.
In a medium bowl, sift together ground spices, flours and baking powder. Stir into egg mixture to make a heavy dough.
Divide dough into 2 pieces, forming each piece as a log as long as the cookie sheet. Place on prepared cookie sheet and flatten rolls to 3/4" thickness.
Bake 20 minutes or until golden brown in the preheated oven. Remove from oven to cool. Reduce oven heat to 300 degrees. When cookie logs are cool enough to handle, slice each log crosswise into 1" slices. Place cut side up back on the cookie sheet. Bake an additional 10 minutes. Turn biscotti over and cook another 5 minutes. Remove from oven and cool thoroughly.
