Strawberry Pie

I was craving fresh strawberry pie the other day and this is the recipe I came up with.  Raspberries in the glaze make the difference.

Top with a LOT of whipped topping and a dash of chocolate syrup!

Very low fat.

  Ingredients:
  • 1 baked 9 inch pie shell
  • 1 quart fresh strawberries, cleaned and sliced
  • 1/2 pint fresh raspberries, sieved or blended
  • 3/4 cup sugar
  • 2 1/2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup water

Directions:  Combine and cook over low heat - raspberries, sugar, cornstarch, salt, and water - until thickened, about 10-15 minutes.  Toss with sliced strawberries to coat.  Pour into prepared pie shell.  Chill at least 2 hours.
